Back in the Swing of Things



So here it is Thursday night and I'm finally motivated to get back to  my cooking on Thursday night  instead of leaving it all to Friday.  I'm also looking forward to a new recipe of lentil walnut pate'(vegetarian liver). Fish and soup already up and cooking ,my brownies are finished my  challah is rising and my chocolate chip cookies are in the oven.  Here is my menu I hope to post some pictures of my finished products tomorrow.
FRIDAY NIGHT
 Gefilte fish, chicken soup with beef & marrow bones, french roast with a mirin , miso braise, broccoli rabe, potato kugel, Israeli green beens, and roasted cauliflower & tomatoes.
SHABBAT LUNCH
 Eggs & onion(raw & caramelized), lentil walnut pate, chulent,  spicey miso roast chicken, coleslaw, cucumber salad, tomato salad, tahina(recipe to follow).

Whole wheat challah, brownies, chocolate chip cookies.

Tahina
1 15 oz can of Tahina/sesame paste.
2 Cups cold water
1 -2 tsp salt
4 cloves garlic chopped finely
1/4 - 1/2 cups chopped parsley
Juice of two lemons.
Place sesame paste in  large mixing bowl. Using an electric mixer, on a low setting,  slowly add the salt into the sesame paste.   Slowly add 1.5 cups of water to the paste with the electric mixer.  Be aware that the paste will thicken as you add more water, until you reach a saturation point and it will begin to loosen up.  Incorporate the garlic (whisking away with the electric mixer).  Add the parsley then the lemon juice.  At this point you will mix in the rest of the water until it reaches the desired consultancy.

Really not in the mood to cook

Here it is Friday morning  din't get my food shopping done until last night and a crazy week at the hospital.So  this morning when i got up I tried to   get myself  going and the right frame of mind o I  started with my usual gefilte fish and chicken soup but I added  lentils to the soup to kick it up a notch  and then got my baking going and made my chocolate chip cookies and  orange  brownies.Then on to the side dishes cole slaw,tachina,cucumber salad,grilled asparagus, roasted brussel sprouts with onions and mushrooms,mixed  vegetable kugel,roasted fingerling potatoes,eggs & onions,Then I got going on my mains  roasted chicken with orange & cranberries,Garlic lime chicken(I cheated mrs. dash marinade) & finally chulent. Sometime simpler is better  ,But as usual once I got going the  aroma in the  kitchen and the satisfaction of a couple  of good home  cooked meals and , especially knowing that   in a few hours I'll be lighting  the  שבת  candles  and I can really just enjoy the next 25 hours. have  a  שבת שלום  to all my family & friends ENJOY !!!

Chicken Pot Pie

Or what you can do with that leftover boiled chicken from  my soup .
All it takes is some of the staples so many of us have in our pantry,fridge  or freezer.And a great  all in  one meal.So here it goes one of my most requested  recipes




 1  large onion chopped
 8oz sliced mushrooms(1 can drained)
 3 cloves garlic chopped
1 package of  thawed puff pastry cut into strips
1 bag of frozen mixed vegetables
 1 large cooked potato peeled ( 1can drained potatos)
2 cups chicken or vegetable broth
2 cups boiled chicken cubed
 4 tbs canola oil & 1 tsp
salt & pepper to taste
1/2 tsp poultry seasoning
 4 tbs flour
1egg
 Pre - heat oven to 350 degrees
In a large sauce pan in 1 tsp oil  saute onions until translucent add mushrooms & garlic until softened set aside in a clean bowl,place remaining oil & flour and stir well  until light brown creating a rue ,place  the vegetables,potatoes, onion & mushrooms,the stock and chicken back into the sauce pan stirring until mixed well.place in a greased baking dish place the puff pastry sheets in a basket weave pattern  and brush with the egg wah .p
Place in the pre heated oven and bake for 45 minutes

Friday Feb. 5th 2011 Rosh Chodesh Adar Rishon

So here it is Friday again another week just flew by and with all the  ice/slush this past week not really in the mood to cook , so I went with some  oldies but goodies ,but once again once I started with my baking last night the ball just started rolling on its own
so here's this weeks menu.
 Friday night:
    the usual  gefilte fish,chicken soup with flanken, chicken with  wine and mushrooms,grilled baby bok choy,steamed broccoli,allepo string beans,roasted butternut squash with a mustard agave glaze,popcorn cauliflower ,roasted root vegetables
Shabbat lunch:
 eggs & onion,chulent ,roasted 1/2 turkey breast
assorted salads cole slaw cucumber salad,tachina, zucchini in tomato sauce
 low fat carrott cupcakes Whole wheat challah,chocolate cookies
looking forward  to  a restful שבת  even with th  impending snow again
